One development was the road system which allowed animals to be transported from almost any farm to distant slaughter and processing plants. The second was refrigeration and other methods of preserving perishable products. These allowed animal products to be transported and sold in other regions, other countries, or other continents.

The triangular affaires are built up by characteristics of the poles as well as the complex direct and indirect relationships between them. Each pole of the triad has its own internal organisation. Consumers of food are organised in households in ways that vary across countries. Provisioning systems, including the way retail shops sell food to consumers, differ greatly. And state regulatory and political systems are strongly contrasted between countries. A simple example is organic food, where such relationships are highly decisive for how organic production, consumption and regulation are organised and framed.

The disagreement in such cases does not necessarily involve disagreements about facts. Both sides may agree, for example, about the incidence of mastitis, the neonatal mortality rate and the level of ammonia in the air on a given farm. And science can provide valuable guidance, for example by determining what level of ammonia is actively avoided by animals, and what level reduces their growth rate. But disagreements still arise because people attach different levels of importance to the various factors that contribute to animal welfare.
